Gustare Honey is a new premium honey brand targeting the luxury food market in the UK, Europe and the Middle East. The honey is produced by artisan beekeepers in Australia, and unlike other honeys on the market it is mono-floral, meaning each type in the range is sourced from predominantly only one plant species. Importantly, each type of honey has not been filtered and blended with other honeys, which gives each type a distinct richer, more fragrant flavour unique to that particular floral type.
Beekeepers and producers of the honey consist of father-son team, Paul and Daniel Costa. The pair have been producing raw honey in Australia since 2000, after learning the trade from a local beekeeper who kept hives on their land. After becoming deeply interested in the process, they purchased 160 hives and their business grew from there. They now own 500 hives which produce approximately 100 tonnes of honey per year.
Due to climatic differences, local flora, season and weather, each bee colony produces a unique honey and this original flavour is not diluted with other honeys before making its way to our stores. This raw and natural honey also maintains all of its health benefits thanks to an absence of chemicals and antibiotics in the production process, unlike many other honeys on the market. As a result, there are 4 different types of honey currently available; delicate, mild, strong and rich, as well as the new Jelly Bush.
Paul Costa’s business partner, Business Development Consultant Jason Hayward-Jones, is working on developing the brand and raising investment for distribution in UK, Europe and the Middle East via private investors and the Crowdfunding company Crowdcube.

Jason Hayward-Jones said: “The range of honey we produce in Australia from its natural flora is quite wide, covering several different climatic zones, and the distinct terroir of the growing conditions is one of the many ways we differentiate ourselves from other brands on the shelves of UK retailers. Bees are essential for the pollination and production of many plant species essential in the human diet. Professionally managed, fit, healthy and vigorous bee colonies that ‘chase the pollen’ are one way in which we can overcome bee colony collapse disorder. The more bees the better, and the more apiarists’ heads in this the better!”
As well as showcasing at trade fairs across the UK, we are planning to stock Gustare Honey in luxury food halls, targeting discerning international customers.”
In Europe alone 315,000 tonnes of honey is consumed each year, with over 80% being imported when EU production is down.
“We are confident that with the initial funding, our unique product will fill a gap in the market for high quality, raw, single source, mono-floral honey” Jason said.
