After finishing college, the Vive Le Cheese Competition Winner, Dez worked at the Ritz hotel, Piccadilly with Michael Quinn MBE and Andreas Antonia. He then moved to the Michelin rated, terrace restaurant situated at NEC, before helping to open Alverton Manor. In 1990, he became head chef at the Greenbank hotel, Falmouth, gaining it its first AA rosette. He took over at the Royal Duchy hotel Falmouth in 1992 helping achieve their 4 star status and being awarded 2 AA rosettes. In 2008 he took on the position of group development chef for Brend hotels. As well as entering various competitions and reaching the semi- finals of chef of the year, he is a member of the Craft Guild of Chefs and British Culinary federation and regularly partakes in cooking demonstrations.
