1.                 History

 

Cedar Baklawa (Dad Ltd) was first established as a Baklawa Bakery back in 2000, based in Park Royal in London.

The business was founded by Abu Samir, who had been making Baklawa since the 1960’s, based on a traditional, Lebanese family-recipe which had been passed on through the generations.

The Cedar Baklawa name originates from the Cedar tree, which is the national tree of Lebanon, the place where these delicious family recipes were originally developed and perfected.

Now under the guidance of the founder’s son, Samir Chouman, the business has expanded into a larger bakery in Luton, Bedfordshire, to enable the making of larger quantities but still retaining that vital hand-made element as well as facilitating the making of some exciting new product areas such as Cinnamon Buns to help us find a wider audience for our delicious products.

 

 

2.                 Baklawa vs. Baklava

 

Baklava is a layered pastry dessert made of filo pastry, filled with chopped nuts and sweetened with syrup or honey, which has been around for many centuries. It originates from Mesopotamia, in the Middle East c.800BC and was one of the most popular sweet pastries of the Ottoman Empire.

“BAKLAWA” is the name used by 5 main countries of the Middle East, which were historically all part of a single larger region, namely: Lebanon, Syria, Palestine, Jordan and Israel.

Greek & Turkish products generally use a honey-based syrup which tends to be sweeter and are generally have a heavier texture & called BAKLAVA

 

3.                  Cedar Baklawa

 

The classic CEDAR Lebanese-style  “BAKLAWA” consists of filo pastry, layered with clarified butter or ghee, filled with actual nut pieces and steeped in a delicate, natural syrup, which is then cut into a variety of different shapes. They are generally lighter in texture and less sweet.

BAKLAWA was traditionally thought of as more of a luxury for special occasions, religious events & gifting but today it is more widely used as a delicious treat with tea & coffee or a wonderful dessert after a tasty meal.

The CEDAR Baklawa range covers 3 different sizes for alternative usage occasions as below:

 

·         200g : Perfect all year round treat size, ideal with tea or coffee (10 pieces)

 

·         360g : Ideal for sharing with family & friends or as a small gift (18 pieces)

 

·        750g : Larger family gatherings, seasonal & festival occasions & gifting (37 pieces)

 

We have also introduced a New CEDAR BAKLAWA Chocolate 200g product, which has proved very popular with consumers and helped to build sales for the overall category.

In addition to the Cedar Retail offer we can now manufacture and supply a Baklawa range which is suitable for Foodservice providers.

Packed and Quick Frozen into  a 2kg size carton , the product is Quick Frozen prior to supply , which allows for a longer product shelf life. 

As Premium Bakers , Cedar Baklawa have also developed a delicious range of Cinnamon Buns up to 100g, which are ideal for Retail or Foodservice applications.
