We produce award winning, mainly unpasteurised milk cheeses made only from the milk from our own farm which has been farmed organically for 27 years. All livestock are 100% pasture fed. The farm has been independently audited as having a net zero carbon status. All our carbon emissions are more than offset by the 35,000 mixed broadleaf trees we planted here in the past 25 years and by the, independently analysed, soil carbon sequestered over the same period. Our independently analysed farm biodiversity has increased by 50% over this period and insect diversity exceeds even that of a nearby SSSI, the fifth best in Scotland. 

As if this were not enough, we practice the highly unusual method of cow-with-calf dairying, where the calf stays with its own mother not for just a few hours, as is the practice globally, but for 5 to 6 months. The milk we use for cheese making is surplus to the requirements of the calf. For this form of dairying to work requires a very high degree of contentment and trust from the cows. We are working with our cows rather than them working for us!

We believe the microbial health of our soils feeds through our healthy, biodiverse pastures into our cows and through them into our cheeses giving them a powerful , fermented wholefood effect in turn on our customers' gut health and personal wellbeing.
