The Spanish Chorizo Consortium is an association of companies within the Spanish meat sector dedicated to the production and export of chorizo. Its primary goal is to guarantee the authenticity and quality of Spanish chorizo while promoting its international expansion.

The Consortium’s "Spanish Chorizo" seal certifies that the product is of entirely Spanish origin and ensures its quality. This distinction guarantees rigorous product control, establishing a recognized and reliable brand for marketing in international markets. This seal covers the vast majority of chorizo formats: sarta (string), vela (candle), sliced, cular, fresh, semi-cured, Iberian, and more.

The Spanish Chorizo Consortium was founded in 2015 by a group of Spanish meat companies with the aim of defending chorizo as a genuinely Spanish product against foreign competition that was damaging its image. Its mission includes the promotion and positioning of chorizo in global markets.

Since its inception, the Consortium has added new member companies and significantly increased its labeling volume. In 2020, it reached a milestone by increasing its labeling by 65%, hitting a record of 3.7 million kilograms annually. In 2021, it was recognized as a partner exporters' association by the State Secretariat for Commerce, under the Ministry of Industry, Commerce, and Tourism. Currently, it comprises 19 companies from across the national territory.

Furthermore, the Consortium implements rigorous control over raw materials, manufacturing processes, and the traceability of the chorizo bearing its seal. To ensure these standards, it collaborates with several independent certification bodies that periodically audit its partners.
