The Fiasconaro family’s remarkable journey in fine
pastry and catering began in the 1950s in
Castelbuono (PA), in the heart of the Madonie
Park. It all started with the entrepreneurial spirit of
their father, Mario Fiasconaro, who began with a
small ice cream shop where he made delicious
granitas and a workshop focused primarily on
banqueting. Before long, he had laid the
foundation for what would become the company’s
first core. The three brothers — Fausto, Martino,
and Nicola — were little more than children when
they began spending their free time helping their
father, playfully learning the art of pastry-making. In the 1990s, the brand made a major leap in quality as
Fiasconaro gained recognition and acclaim beyond Italy’s borders. Guided by his visionary spirit, Nicola Fiasconaro traveled across Italy and abroad to explore new techniques and dessert-making traditions. In 1988, he marked a turning point for the company with the first production of 2,000 artisanal panettone cakes. A chance encounter with sourdough master Teresio Busnelli proved decisive: Busnelli shared his secrets for crafting panettone and inspired Nicola to reinterpret the dessert in the Madonie style. This led to the creation of the very first Fiasconaro panettone:
the Mannetto, made with the renowned manna, a natural resin extracted from the ash trees of the
Madonie mountains. Today, the company remains firmly in family hands: Fausto serves as Showroom Manager, Martino oversees Administration, and Nicola, an award-winning pastry chef, continues to craft the brand’s most iconic creations alongside his son Mario, now Head of Production. Now in its third generation, Fiasconaro stands as a symbol of Italian excellence, with a sales network spanning more than 65 countries and a well-established reputation in the world of
international haute patisserie.
