The Ethical Spirits & Co. is a Japanese craft gin distillery based in Kuramae, Tokyo. We started with producing gin from sake kasu, a byproduct of sake production, that is often discarded. Our philosophy is "Starring the hidden gem" - aiming to discover the potential of ingredients that would have been discarded like sake kasu and waste beer.
