Bakery remains one of the most vibrant and commercially significant categories at IFE, with the 2026 edition showcasing a truly international mix of brands responding to evolving consumer tastes across indulgence, convenience and premiumisation.

This year’s line-up highlights both innovation and heritage. UK-based Cedar Baklawa will unveil a new chocolate baklawa variant, tapping into growing demand for indulgent, hybrid formats that blend traditional recipes with contemporary flavour profiles. Regal Food Products Group is also pushing the category forward with three limited-edition, trend-led baklawa launches – Dubai Style Chocolate, Caramelised Biscuit and Choco Nut – signalling continued appetite for bold, globally inspired sweet bakery.

Alongside these launches, a strong line-up of established international producers underscores the depth of the category. Major names including Bridor, Europastry and St Michel Biscuits are joined by specialist European producers such as Fiasconaro, Molino Braga, Galletas Artiach and MR. BROWNIE, showcasing everything from traditional recipes to high-volume, retail-ready formats.

The UK’s bakery sector is also well represented, with brands including Samworth Brothers, The Isle of Wight Biscuit Company, Stag Bakeries and Ultimate Cookie Co demonstrating the continued strength of domestic production across premium, everyday and snacking occasions.

International diversity remains a key theme, with exhibitors such as Ioniki, SWEETO, VSMAK Group and VATSAK bringing regional specialities and emerging trends to the fore. Ingredient and component suppliers including Canditfrucht Spa and JD Food Public Company Limited further highlight the innovation happening across bakery development and manufacturing.

The show also reflects the growing importance of specialist formats and scalable concepts. Only Cannoli B.V., the Netherlands’ leading cannoli producer, arrives at IFE with a compelling foodservice proposition built on consistency and ease of operation. Producing authentic Sicilian cannoli in 19 flavours, the brand now supplies more than 1,000 businesses across over 35 countries, offering a long shelf life and a turnkey solution suited to hospitality, retail and leisure venues. Having entered the UK market in September 2024, the brand is continuing its expansion as demand for premium, ready-to-serve bakery concepts grows.

This breadth of offer – from artisanal products to large-scale supply solutions – underlines the central role bakery plays across multiple channels, from coffee shops and hotels to supermarkets and travel retail.

Federico Dellafiore, Event Director for IFE, comments: “Bakery is one of the most important and consistently high-performing categories at IFE. It brings together heritage, innovation and scale in a way few sectors can. From artisan producers to major international manufacturers, the diversity of bakery exhibitors reflects both the strength of global demand and the pace at which the category continues to evolve. It’s a key destination for buyers looking for products that combine quality, convenience and strong consumer appeal.”
