Anna-Sophie Deetjen
Anna-Sophie is the founder of Nibblr, a digital-twin platform using AI to transform how food products are formulated, tested, and improved. Her journey into food innovation began as a founder herself, where she experienced first-hand how slow, fragmented, and costly product development can be - from ingredient discovery and reformulation to nutrition, compliance, and scale-up. This sparked a deep interest in the mechanics of how food is actually made. Alongside founding Nibblr, Anna-Sophie also leads Morrow, a venture developing coffee without coffee beans, rooted in deep R&D and resilient supply chains. These experiences revealed a systemic gap: food teams lack intelligent, trustworthy tools to make fast, evidence-based decisions. Nibblr addresses this by combining domain-specific AI, structured ingredient intelligence, and human-verified data to create a digital twin of food formulation enabling teams to simulate, compare, and optimise products before they ever enter the kitchen.
