One Pot Pasta Recipe by Lisa Marley Plant Based Chef
One pot pasta dish made with @novofarina pea mince.
Ingredients:
1 tablespoon Olive Oil
1 Onion, peeled and chopped
1 Garlic clove, crushed
1 Carrots, peeled and finely chopped
1 Celery stick, finely chopped
2 tbsp Harissa paste
2 x 400g tin Chopped Tomatoes
1 tsp Dried Oregano
Salt and Freshly Ground Black Pepper
6 sheets Dried Lasagne, broken into 2 or 3 pieces
150g of hydrated @novofarina pea mince
100g Cream Cheese
Handful of fresh parsley, for garnish
Instructions:
1. Heat olive oil in a large pan over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
2. Add the crushed garlic and harissa paste
to the pan and season with salt, freshly ground black pepper, and dried oregano. Stir well to combine.
3. Place the broken lasagna sheets over the vegetable mixture in the pan, making sure they don’t stick to the bottom.
4. Carefully spread the hydrated @novofarina pea mince over the lasagna sheets.
5. Pour the chopped tomatoes over the mince, along with an additional 2 tins of chopped tomatoes.
6. Cover the pan with a lid and cook on medium heat for 20 minutes, stirring occasionally to prevent the pasta from sticking.
7. Dot the cream cheese around the dish and let it melt into the mixture.
8. Garnish with fresh parsley before serving.
