Health benefits Chickpea flour can be used as a healthy substitute for wheat flour. It is a good source of protein and an excellent source of fibre, with more protein than other flours. Chickpea flour has less carbohydrates than wheat four and is also rich in magnesium, copper, folate and manganese. Baking with chickpea flour Chickpea flour has been most popular in India, in curries, desserts, breads, pizza bases, cakes and tortillas. It can be used as a substitute for wheat flour in most dishes, particularly in baking, often being used in breads, cakes and tortillas. Chickpea flour can be used as a binding ingredient in fritters and veggie burgers, as a thickener for sauces, soups and stews, for making flatbreads and batter-based foods like pancakes and waffles, and to make batters for deep-frying other foods.
